In the oily fish family, anchovies are among the fish richest in omega 3, "good" fats that are essential in the prevention of heart and brain diseases.

SOURCE OF FLAVOUR

You can enjoy anchovy fillets as a fresh and light appetizer, or you can season pasta dishes or roasts with it. Anchovy is one of the most versatile ingredients in both Spanish and Italian cuisine. There is no region that does not contemplate it in its culinary tradition. Just think of the Piedmontese Bagna Cauda, the Puntarelle and anchovies of the eternal city or the Spaghetti cu a muddica in Sicily.

But its versatility does not end there because it is enough to add a few anchovy fillets to a dish to obtain that much sought-after "extra touch". Anchovy is in fact a natural flavour enhancer which completes the structure of a dish through that note of flavour which the Japanese call Umami, the fifth element of taste in addition to sweet, salty, bitter and sour, which is why it is also an irreplaceable element for many recipes, even those based on meat.
