The exquisite anchovies from the Cantabrian Sea are fished in the cold waters of the Bay of Biscay in spring. After curing for 9 to 12 months, they acquire an unmistakable and intense aroma, with a soft and fleshy consistency and balanced taste.

They manage to match all flavours, even if the most ardent connoisseurs prefer to simply enjoy them on a toasted crouton with extra virgin olive oil, to be able to grasp all the nuances that remain on the palate.
